Apple Cider Roasted Sweet Potatoes
and Yams


Ingredients:
  • 2 sweet potatoes, peeled and cut into spears
  • 2 yams, peeled and cut into spears
  • 1 tablespoon olive oil
  • 3 tablespoons fresh apple cider
  • 3 teaspoons pumpkin pie spice
  • Salt and pepper

Preheat your CBO oven as instructed in the "User‚Äôs Manual." When cooking, oven should be about 425°F.

Whisk together olive oil, cider, spice, salt and pepper. Toss this mixture with the sweet potatoes and yams. Lay potatoes in a single layer on a baking sheet and roast for 25 minutes or until they’re browned on the edges and can be easily pierced with a fork.
