Pizza-making Stardom!
“Our CBO-750 wood burning brick oven is absolutely the draw of the neighborhood and my teenage sons. I never imagined the popularity. Outdoor rooms in Texas are big and mine beats everyone else’s!
Our oven’s now about three weeks old and I’ve made pizzas four times and calzones once. It’s everything I wanted it to be. It lights very fast and takes only about an hour to reach the temp for cooking. (I take advantage of the warm-up time to do some cooking; browning sausage for the pizza is a classic trick.) We also purchased a digital thermometer, which really helps you know where your temps are at. The oven cooks a pie in about two minutes and the view hole in the door lets me check what’s cooking without opening the door and losing heat. It uses very little wood; only about three small logs and a good handful of kindling. Impressive! And with so few pieces to deal with, installation was much easier than I expected.
Our family is big on cooking together, but this oven is like some kind of polar magnet. The kids especially love to prep the oven and even help cook. (The parents enjoy the vino and are keen to be served the pies. It’s become a weekend tradition.)

Wood-Fired Lifestyle Brings Everyone Together
“After just two weeks of us practicing cooking in our new CBO oven, the neighbors have learned the smell and start gathering quickly. All the men in the family have become happy log-splitters and even our teenagers have been inspired to try their hand at pizza. We have tried pizzas galore, steaks, shrimp, ribs and chicken and nary a leftover in sight! We are trying breads next. It is quite amazing how long and how much you can cook with just one firing. Love it and the accessories we purchased, especially the grill grate that we fire-up on top of coals and make the most amazing steaks and seafood. No cleanup; it all burns away. We are really enjoying cooking and everyone joins in. Sometimes we ace it and sometimes we totally bomb, but every time is an event and we laugh so much at our experimental mistakes that they are well worth it. July has been one reason to party one after another and a cord of wood is already gone. Seems crazy, but that thing gets fired-up even on the hottest days. The kids like swimming in the pool next to it and jumping out to throw in a pizza, then back in the pool. They keep the oven just hot enough so we can cook again for dinner and then a dessert pizza with our wine after dark.

Mobile Pizzeria Cooks 60 Pies a Day
“We bought an Amici oven from you this last January. I wanted to contact you earlier, but we have been so busy. We ended up in three farmer’s markets this season and I must say, the oven is the star of the show; I also make really good pizza, I guess. (Check us out on Yelp/Portland, search under ‘La Pizza Pela.’) We averaged 60 pies a day at the Lake Oswego market and answered about five questions per hour about our oven, I swear. It is such a guy-magnet; they all want one for their backyard. I tell them to call you and collect information on all of Chicago Brick Oven’s products. A quick note on how we got started. The oven came just as promised—in perfect condition. The way it baked was like nothing I have ever made; and I was a journeyman baker for 14 years, am a culinary school grad and have a wall full of baking awards. I was amazed how this oven performed.
We since have a menu featuring all the popular toppings and some unique ones of our own. We have developed recipes and techniques that allow us to bake two 11″ pies at a time and push the production up to about 15 pies per hour, no kidding. We heat with two-year-dried hardwood for about 90 minutes, then keep the flame high and every 8-10 pies, or so, we just shovel the fire to the other side, give a quick sweep and boo-ya—we don’t miss a beat! Our bake time is under five minutes a pie. In the month of July, we produced over 1,200 pies in our three markets. The oven is not only handsome and well made, it’s also a workhorse that has paid for itself in half the time we thought, exceeding all our expectations. I just wanted you to know, first-hand, of our experience so far with your product. Mario Batali is one of my culinary heroes and I wear my orange crocs proudly, singing the praises of Chicago Brick Oven.”
